Trattoria I Fratellini Brace e Spiriti dal 1958

I did a LOT of research on where to eat a proper Florentine steak during our 5 day trip to Rome (with a one day fast train visit to Florence). Trattoria I Fratellini was recommended in several places including here and Reddit. It was very easy to make recommendations for a late lunch. We ended up running late (didn't expect the hike up to Piazza Michelangelo to take so long) and they owners were very accommodating of our delay. We arrived and were seated quickly at a nice table. The hostess/waitress immediately brought us water and both house and gluten free bread (for my teen daughter). When it came time to order, we put it in the chef's hands. He brought us the raw cut with a price. I thought it would be too much for the two of us but he assured me after rendering the fat that it would be perfect (he was right). We started with a very nice capresse salad and then relaxed until the steak arrived. It was cooked to a perfect medium rare. The steak had large clusters of salt that perfectly finished the cook. Accompanying the meat were potatoes that held the flavor of the wood fire which immediately brought to mind old camp fires. I had told the waitress (and chef) earlier that my daughter would likely prefer a medium and was told this could be done after we tried it cooked to the correct temperature. She ended up loving the first few pieces she ate but asked for some others to be cooked to medium. The chef had no problem doing so and those pieces came out perfectly cooked for her as well. It was a great meal and both the hostess and chef could not have been nicer. Not cheap but the best steak either of us has ever eaten so well worth it in my opinion.
