Saporium was the culinary highlight of our trip to Florence. We started with cocktails at their cozy lounge next door, wonderful flavours and combinations, the perfect start to the evening. Then, we had the 7 course Pes-care menu which I cannot recommend highly enough. Memorable courses include the wild garlic risotto and the sea bass. The team is very attentive but also very relaxed and knowledgeable, they create a uniquely warm atmosphere. When the rain precluded us from walking back to the hotel and no taxi could be found we took it as a sign: we enjoyed one last cocktail and promised each other we would come back here.
We ate the vegetarian tasting menu and it was absolutely delicious. The dishes were creative and playful. We loved how they made us feel, always discovering a new surprise. Some dishes had a very warm comforting vibe. I want to thank the kitchen and the staff for this excellent experience. Thank you so much for sharing your food and hospitality with us.
Ultimately a confused and disappointing experience. Upon arrival we were greeted by staff who did not seem aware that the booking to rough the website mandated you to choose from apéritif’s in the adjacent bar. Once this was cleared up we had a great dirty martini to start before heading back to the restaurant for the tasting menu. We chose a Barbaresco to accompany the meal, sadly the sommelier didn’t suggest decanting nor was he aware of they significant time this relatively young vintage required before it reached its potential. Onto the food - we had both the meat and fish tasting menus consisting of 8 courses. What followed was a very pedestrian start with tasty but unexciting and under seasoned dishes. Fortunately this was somewhat remedied by the last two dishes which we both enjoyed. Deserts were good, no offer was made to accompany them with a desert wine. Service was very attentive which was a plus. Won’t be coming back.
Saporium Firenze delivered an outstanding experience from start to finish. The food, service, and wine pairing were all exceptional. The risotto absolutely blew our minds, and every single dish was truly remarkable. Without a doubt, the best meal we had in Florence. For context, we also dined at Santa Elisabetta (2 Michelin stars) and it was a real disappointment, so we don’t say this lightly. We’ve eaten at many Michelin-rated restaurants across three continents and are very familiar with what excellence looks like. This place won’t disappoint. The wine and olive oil were so good that we even bought some to take home. Highly recommended.
